MÙA Craft Sake is Vietnam’s pioneering craft sake brewery, established in 2022 through a collaboration between Japan’s esteemed Heiwa Shuzo Sake Brewery, East West Brewing Co., and Mùa Trà Quế restaurant.
Located in Ho Chi Minh City, MÙA Craft Sake utilizes locally grown Vietnamese rice, including the award-winning ST25 variety, to produce its sake. The brewing process involves traditional methods, starting with the cultivation of koji mold on steamed rice, followed by fermentation lasting 20 to 25 days. This meticulous process results in a sake rich in flavor and character.
MÙA offers a range of sakes infused with local fruits and spices, such as pineapple chili and passionfruit with Vietnamese black pepper, providing a modern twist on traditional sake.
